Aged in barrels that have previously held two or three other wines for 12 months, with 10 to 15% new oak.
Winemaking
Hand-harvested. 100% destemmed. Cold pre-fermentation. The winery takes a very hands-off approach to winemaking. Since 2019, all winemaking has been done without SO2.
In its early years, this vintage displays a floral character with notes of peony and a lovely aromatic freshness. On the palate, there is a lively acidity, with a certain tension imparted by the terroir’s bedrock. The oak aging is carefully controlled, allowing us to preserve this aromatic freshness and elegant finish.
