Winemaking
Hand-harvested. 100% destemmed. Cold pre-fermentation. The winery takes a very hands-off approach to winemaking. Since 2019, all winemaking has been done without SO2.
The iron-rich soil enhances this wine’s vitality. It offers a lovely aromatic freshness—morello cherries and tart black fruits—complexified by tertiary notes. Its structure, driven more by acidity than tannins, lends the aromas a beautiful persistence. Barrel aging imparts a smoky character that supports this lingering finish. It is a very juicy, tangy wine. In the sunniest vintages, it can express notes of blueberry.
